Shingo

Shingo is a MICHELIN-starred sushi temple in Coral Gables, the personal restaurant of chef Shingo Akikuni, who earned his first star here in 2024 after another at Miami’s Hiden. Behind a discreet, understated entrance lies a serene fourteen-seat room built around an L-shaped hinoki counter, its interior crafted in Japan, then taken apart and rebuilt on site. Few rooms in Miami feel this purpose-built for sushi.

The experience is a single, set omakase of around eighteen courses that changes with the seasons. Chef Akikuni works in the Edomae tradition, finishing premium fish flown from Japan as nigiri, balanced with local Florida ingredients and a quiet sense of theatre. Each piece is shaped and served by hand, course by course, in a measured, almost meditative rhythm. It is one of the most accomplished sushi counters in the state.

This is special-occasion dining at the highest level, with a price to match and an atmosphere of hushed focus rather than buzz. The counter seats only a handful of guests per service, so the chef’s attention is direct and personal, and sake and wine pairings round out the meal. It is best for couples and serious diners who want to give an evening over entirely to the kitchen.
